Bread pudding

Ingredients:

  • 150g flour
  • 200g breadcrumbs
  • 115g raisins or currants
  • 2 tbp sugar
  • ½ tsp ground ginger
  • 2 whole eggs
  • 2 egg yolks
  • 235ml heavy cream

Method:

Combine flour, breadcrumbs, raisins, sugar and ginger in one bowl. In another bowl, beat together the eggs, yolks, and heavy cream. Combine all the ingredients for a nice thick batter. Turn out into a well buttered dish. Bake for about 45 minutes at 350 degrees.


Apple Pudding of 1700

Ingredients:

  • 12 small apples peeled and quartered
  • 2 lemons
  • 8 eggs
  • 1 sheet puff pastry
  • 1 tbsp loaf sugar

Method:

Peel and quarter twelve golden-pippins; cast them into water, in which boil them as you do for Apple sauce; sweeten them with loaf sugar, squeeze in them two lemons, and grate in their peels; beat eight eggs, and beat them all well together; pour it into a dish, cover with puff paste, and bake it an hour in a slow oven.


Hasty Oatmeal Pudding

Ingredients:

  • 575ml water
    • 1/4 tsp salt
    • 40g butter
    • 225g oatmeal

Method:

Bring the salted water to the boil in a pan with 15g of butter. Add the oatmeal slowly, stirring vigorously. Keep stirring for another 3-4 minutes and serve hot with the rest of the butter, cream or milk.


Strawberry Fritters

Ingredients:

  • 450g large strawberries which need to be dry with their stalks on
    • 175g plain flour
  • 50g caster sugar
    • 2tsp grated nutmeg
    • 2 beaten eggs
    • 225ml cream

Lard for frying –margarine will do nicely

Method:

Put the flour, sugar and nutmeg in a bowl, add the eggs and cream and stir. This is now your batter and must be left to stand for one to two hours. Heat the lard hot enough to fry not burn. Dip the strawberries into the batter and fry them in the hot lard. Drain them off on kitchen paper and enjoy!
